Tasting Notes
Purple plum colour.  A concentrated aromatic profile showing plenty of spice with hints of clove and pepper.  It comes alive on the palate with voluptuous dark purple to black fruits that just keep going, and a tight defined tannin structure.
Winemaking
This single vineyard wine comes from the very meticulous, southern most vineyard in Padthaway.  The fruit was picked in the first week of April, then crushed to both large and small open top fermenters.  The ferment was allowed to get to 32ºC (most of the Shiraz ferments are allowed to peak at 28ºC), but overall the rate of fermentation was quite even and not erratic. After 15 days both fermenters were pressed to the same tank, with both the free runs and all the pressings combined.  

After 36 hours the wine was racked to predominantly French oak (the two wines in the portfolio that see a lot of American oak are both the McLaren Vale Lily’s Garden and Angel’s Share).  Like the majority of the Two Hands’ wines, malolactic fermentation occurred in barrel, was racked and acid adjusted and then racked once more prior to being bottled in August 2004.

Vintage Comments
Considering the dry winter that most of South Australia had experienced Padthaway fared better.  July bought lots of rain but it was dry during August with several frosts.  Thankfully the vineyard where we take our Shiraz from escaped any significant damage.  Although yields were down, the good dry weather in spring allowed for good set.  

The hot spell in January was welcomed as ripening was even with no disease problems.  The rain during February and early March created some nervous moments but we finally picked our fruit in April unscathed from berry splitting and disease.  Although this wine has a high alcohol it is integrated amongst the forest floor characters, spice and other complex aromas and flavours.
