COLOUR
Deep magenta.
AROMA
The glass is bursting with rich fruits: Ripe raspberries, black cherries, cloves and pepper dominate the hints of smokiness and sage that brew beneath.
PALATE
The palate is tight and elegant, full of rich luscious fruit. Seductive comes to mind. The great fruit sweetness is intertwined with fine tannins and spice that are neatly balanced into a long and fleshy finish.
Crushed and fermented in 5-10 tonne open top fermenters with regular pump overs; three daily during peak fermentation to extract colour and tannin. Following 7 to 14 days of maceration the dry free run is drained to tank. The skins are then pressed and the pressings transferred to the same tank, the wine is then racked to barrel. Malolactic fermentation takes place in barrel. Minimal fining and unfiltered.

2001 Two Hands Sophie’s Garden Padthaway Shiraz
Strong black in colour the bouquet is immediately cooler with notes of Asian spice, clove, western red cedar, olive branch, liquorice and dark chocolate, on the nose this is still tight and brooding. The palate has a very broad weight of concentrated fruit the builds strongly in the mouth. This is a fun ride but the back end lacks acidic life and tannin weight. This would be best drunk sooner rather than later, in the next 1 to 3 years. MT

Brick red
The nose is very interesting with notes of spicy red fruit, cloves, earth, tar, moss rock and forest floor. The palate disappoints a little. The entry is soft with lovely red/black fruits and licorice spice, but overall there is no great structure, weight or persistence. Still a pleasant drink, so enjoy for the next 2 years. – MW

A deep black core with an aged red edge. This bouquet is still quite tight with an interesting green edge. Peppermint, ginger, roasted meats; smoke, grease and burnt toffee lead the way. A tight and focused entry that forces forward on a linear and narrow power band that is interesting and persistent. I love the energy and vibrancy here and this will still take some time to resolve. The tannins are broad and fruit filled and sizeable, this could age easily for another 5 to 8 years as it finishes neatly and cleanly. MT

Black to brick red with some brown hues
At the fore there are lifted red fruit creamy spice, soy notes and some herbal forest floor characters. Underlying subtle sweet vanilla bean notes, meatiness and mocha follow the charge. On the palate, the red fruits and forest floor characters continue, supported by some subtle sweet oak and moss rock notes. Overall the palate is good with a good mix of primary and secondary notes. The acid is still focused, but the fruit tails away a bit on the late palate leaving the tannins a little drying. On the whole though, the wine is still clean, tight and vibrant and probably has more aging potential than the McLaren Vale. Drink now until 2014 – MW
