Bouyant raspberry, red cherry aromas with cracked peppery tones
Palate
Succulent damson and refreshing strawberry, cranberry like flavours. Restrained savoury, sage and bay leaf characters with earthy textures, grainy tannins and shadowy oak to season.
Winemaking
The grapes were crushed and fermented in an open top potter fermenter for 8 days on skins with average temperatures between 23 to 28 degrees Celsius (higher for Grenache) and regular pump overs to extract colour and tannin. The grapes were then pressed to tank and the wine racked prior to maturation in barrel.

Shiraz aged 10 months in 20% new French and American oak hogsheads with the remainder in older oak. Grenache aged in 95% older oak with 5% remaining in stainless steel for aromatic lift.
