An intense bouquet of jet black plums, cloves and fennel; it is bright, bouncy and intense
Palate
The palate is soft and approachable with a lovely coating texture; the mid palate builds to a focused and well defined finish. This has loads of gob smacking fruit and is a pleasure to drink straight off the bat.
Winemaking
This wine is more in the mould of the 2002, with a tighter tannin structure.
The grapes were crushed into and fermented in open top potters, with regular pump overs twice daily to extract flavour, colour and tannin. The grapes were then pressed and the wine was transferred to tank and then racked to barrel for oak maturation.
