The bouquet is young and lively with notes of spearmint, menthol, red cherry, aniseed and fig paste
Palate
The palate is loaded with dark berry fruit characters, sweet and well restrained by excellent brandy spirit. Structure, balance and tannins are harmonious and the wine has the potential to age gracefully in a dark cool cellar for many years.
Winemaking
Shiraz and Tinta Amarella blocks were picked and processed separately. The fruit was destemmed, crushed and innoculated. Fermentation must be watched like a hawk to catch it at the predetermined desired sugar level. At this point the ferments were pressed to stainless steel tanks and fortified with aged 77% brandy spirit. After trials, the batches were then blended. 55% Shiraz 45% Tinta Amarella
