Bright, clear, light straw in colour

Aroma

Still restrained at this stage, the bouquet displays subtle mineral characters mingled with a hint of sherbet and the classic Watervale citrus lime

Palate

A delicate elegant style, light bodied with bright nervy acidity. The palate shows hints of apple blossom, mineral characters and cut flowers. This wine has excellent verve and intensity with a long bone dry finish.

Winemaking

Handpicked, crushed and pressed. The free run juice then separated and settled at 2 degrees Celsius for 7 days, the clear juice was racked off and fermentation began at 17 to 19 degrees. Once fermentation was underway, the juice was cooled to 12 degrees. When the juice reached 1.5 baume, the temperature was increased to 17 to 18 degrees until ferment reached dryness. The wine was cold and heat stablised and sterile filtered before being bottled.
