Winemaking
Handpicked, destemmed and crushed into small open top fermenters. Gently pumped over 3 times per day through the peak of fermentation. After fermentation, the parcels were tasted daily until optimal structure and flavour harmony were achieved. Each parcel was kept separate with the fermenters being drained individually and their skins pressed with the free run and pressings being combined to tank. After 24 hours the wine was racked to oak where malolactic fermentation occurred. This restrained wine was bottled earlier than anticipated to capture its elegance and upon release is vibrant and long.
