Colour
Deep, deep red, magenta rim
Aroma
Rich, bold dark fruits dominate, with bitter chocolate, creme anglaise, mocha and underlying spice and cracked pepper
Palate
Fine juicy fruit through the entry to the mid palate where spicy mocha notes emerge with fine tannins. The wine finishes long with juicy persistence.
Winemaking
Crushed into and fermented in five and ten tonne open top fermenters with regular pump overs; three daily during peak fermentation to extract colour, flavour and tannin. Following an average of 15 days of maceration, the dry free run was drained to tank and the skins pressed to the same tank. After 24 hours, the wine was racked to barrel, where malolactic fermentation took place. Minimal fining and unfiltered.
