Made in very small volumes in only the best years for Grenache, Aerope is sourced from older vineyards in the western ranges of the Barossa Valley. The focus of picking in the later stages of vintage, this variety offers the opportunity for extended fermentation with some whole bunch component to allow the optimum extraction of colour and tannin.
From a blend of hand selected barrels matured in older French oak barrels for 18 months, the wine displays a lifted multi-dimensional bouquet with a rich purity of fruit on the palate, backed by soft and caressing tannins.

  • Tasting Notes

    Colour
    Mid red with a bright red core.

    Aroma
    Deep set notes of kirsch, rose petal, sassafras, pink peppercorn and sous bois.

    Palate
    Medium bodied with deep set flavours of raspberry, kirsch, pot pourri, and prevalent notes of sassafras, angelica root, and sous bois. Creamy and round through the mid-palate before turning sappy and powdery through the tannin structure. Long and complex through the finish with note of peppercorn, the flavours roll on and on, way after the wine has left your mouth.

  • Wine Making

    Handpicked and de-stemmed into one five tonne open fermenter and fermented with a “whole bunch” component of 25%. After several days of cold maceration the must was allowed to warm up for fermentation to proceed. During the peak of fermentation the batches were hand plunged three times daily to extract colour, flavour and tannin. After 17 days on skins, the free run was drained off, the skins were pressed. After 24 hours the wine was then racked to concrete tank, where malolactic fermentation occurred.

    Maturation
    Aged for ten months in a small concrete tank and five months in old French puncheons, before an additional 12 months in bottle before release.

    Cellar Potential
    If cellared well, up to ten years.
