With only a few barrels selected, Aphrodite is derived from our best low yielding Cabernet Sauvignon vineyard sites and showcases its varietal hallmarks of blackcurrant and mineral.
From tiny berries, the concentration of flavours is slowly extracted during fermentation to produce a balanced but fruit driven wine with great ageing potential. This wine has plush dense fruit backed by magnificent mouth-feel and weight, matured in 100% new French oak.
Rich and deep with notes of cassis, freshly rolled tobacco leaf, dark coffee grounds, and cigar ash.
Rich and powerful with notes of dark cassis essence, fresh coffee grounds, vanilla bean, and sweet pastry crust. An avalanche of flavour cascades through the front and mid palate. The tannins sneakily build momentum and depth, rolling through to a long glorious and regal finish. Clean and refreshing acidity and complexing notes of cigar ash and dark lead pencil are woven through the finish.
Handpicked, de-stemmed and fermented in a three tonne open top fermenter with regular punchdowns three times daily during peak fermentation to extract colour and tannin. Following an average of 15 days “on skins”, the free run was drained to tank and the skins pressed with the pressings being combined in the same tank. After 24 hours, the wine was racked to oak barrels, where malolactic fermentation took place. Minimal fining and unfiltered.
17 months in 40% new French Taransaud hogsheads with the balance in two to four year old Taransaud.
If cellared carefully, up to 20 years.
