Shiraz is at the heart of the Two Hands story and our vineyard selections give us access to some of the greatest parcels of Shiraz grapes in the country. Each year, every one of the 1,500 barrels of Shiraz is tasted in the search for the very finest cuvée to represent Ares, the pinnacle of our Shiraz production. The handful of barrels that make it through are matured for 24 months in new and one year old French oak, and retasted again and again to ensure only the best make the final blend. A statuesque, powerful and deeply flavoured wine that combines elegance and vivacity.
Deep set with notes of macerating black berries, white flower, Chinese five spice, flesh vanilla pod, black peppercorn and coal dust
Medium to full-bodied, this wine explodes on the palate with saturated blackberry & black cherry. Concentrated & mouth-coating, flavours roll & crash through every corner of the palate. Complexing notes of lavender, pipe smoke, vanilla pod, & short crust pastry add depth and complexity. Tannins are folded through the fruit & provide regal structure whilst the acidity provides freshness & pop. Incredibly long through the late palate with supporting notes of 90% dark chocolate & fresh black pepper
De-stemmed, crushed and fermented in five tonne open top fermenters, with regular pump overs (up to three daily over peak fermentation) to extract colour and tannin. Following 12-21 days of “on skins” maceration the free run was drained to tank with the skins then pressed. Both the free run and pressings are blended to tank and then racked to oak after 24 hours. Malolactic fermentation takes place in barrel. Minimal fining and non-filtered.
23 months maturation with 25% new French oak. The remainder in one to four year old French oak.
