Sourced from one of the highest vineyards on top of Menglers Hill, this quintessentially Eden Valley Shiraz has a soft bouquet of red fruits and fresh cut flowers with a moderately powerful fruit profile that finishes with an amazing minerality.
Wildlife and gumtrees surround this vineyard, a natural inspiration for the colour of this label.
Deep dark red with bright red flashes at the meniscus.
Hints of freshly squeezed blueberries, violets, dried herb de provence and aromatic Cypress incense.
Concentrated and deep through the entry with blue fruits and freshly crushed blackberry. Floral accents roll through the mid palate with hints of star anise and pipe tobacco. Tannins are savoury & mineral accented, which drive through the palate with plenty of length and detail. Notes of pepper, graphite and incense float around the back palate creating layers of complexity.
Destemmed but not crushed into three and five tonne, open topped fermenters with 20% of the ferment using whole bunches. Gently punched down and pumped over twice daily to extract colour, flavour and tannin. After a 16 day maceration, the wine was pressed, with free run and light pressings combined to tank, and then barreled down after 24 hours. Malolactic fermentation took place in oak with racking occurring once over 18 months. 25% of the barrels were aged on fine lees.
Aged for 18 months in 1-6 year old French oak, consisting of 20% puncheons and 80% hogsheads.
