“Destemmed to open stainless steel and concrete fermenters, pumped over and plunged twice daily, 13-18 days on skins, matured in French puncheons and hogsheads (18% new) for 19 months. Deep, dense colour; the striking bouquet exudes savoury pipe tobacco and smoke aromas, spices also seeking airplay. The full-bodied palate features a titanic struggle between the plethora of black fruits and insistent high quality tannins evident from the first sip all the way through to the aftertaste. Remarkable wine.”
